Marcus Mumford revealed his signature salad features burnt cauliflower, pine nuts, feta, spinach and avocado

Taylor Swift can't get enough of Marcus Mumford's salads, which feature a very particular cooking style.
During an appearance on the Wednesday, June 10 episode of the Dishpodcast, Mumford, 39, spoke about cooking for the "I Knew It, I Knew You" singer, with whom he's previously collaborated.
"We've heard you make a phenomenal cauliflower salad," host Nick Grimshaw asked the Mumford & Sons star.
"It's pretty good, we've got it pretty dialed at this point," Mumford admitted with a laugh, revealing the secret was "roasted, but pretty much burnt cauliflower," along with pine nuts, feta cheese on a bed of spinach with avocado. The singer shared that he dresses his signature salad with a mixture of balsamic vinegar and olive oil.

Mumford went on to share that his dish has one very famous fan.
"Taylor Swift came to stay, we did some recording, and we ate it almost every night," he said, adding that it was "that or spiced broccoli."

"We got into a vibe of just eating that," he continued of himself and his wife, actress Carey Mulligan, 41. "[Taylor] came to stay towards the end of COVID, and we were still very much in our cauliflower stage," he said with a laugh, quipping that they were in fact in their cauliflower "era," referencing Swift's record-breakingEras Tour.

The dad of three went on to share that Swift was so keen on the dish that she called it "The Mumford Salad."
Mumford also opened up about having Swift as a house guest during a November appearance on the Table Manners Podcast, sharing that she recorded parts of her 2020 album evermore at his home studio in the U.K.

"It was Taylor f---ing Swift. And she came down right at the end of COVID, and was the most phenomenal house guest, burned a lot of vegetables for her, and she brought a killer candle, actually," Mumford continued.
"Her candle game was excellent," he added. "And she finished the second half of evermore in our studio."

He also revealed their collaboration on the track "cowboy like me" came about because "she asked me to sing along and I said 'yes.' "
Mumford later appeared at a surprise performance alongside the "Fate of Ophelia" star at a Las Vegas stop on her Eras Tour. The pair performed an acoustic duet of "cowboy like me" on March 25, 2023, at Allegiant Stadium.
